Suzanne's Secret 7-Up Apple Pie Crust Recipe
INGREDIENTS:
2 cups flour
1 pinch salt
1/2 teaspoon baking powder
2/3 cup Becel margarine
(Suzanne says the best Becel is from Québec
because they don't put any colour additives in it)
1/3 cup 7-UpDIRECTIONS:
In a large mixing bowl combine flour, salt and baking powder. Cut in Becel margarine. Mix with a pastry blender until mixture resembles coarse crumbs. Sprinkle in 7-Up a little at a time, stirring with a fork until the dry ingredients are well moistened. Shape mixture into a ball and chill for half an hour. On a lightly floured surface roll out half of the pastry to about 1/8-inch thickness. Put into a 9-inch pie pan. Prick crust with a fork. Bake for a couple of minutes until lightly brown. Roll remaining pastry to 1/8-inch thickness for the pie's top and set aside until needed.
7-Up Apple Pie Recipe
INGREDIENTS:
4 tablespoons all-purpose flour
pinch of salt
3/4 cup sugar
1/2 teaspoon nutmeg
3/4 teaspoon cinnamon
1 tablespoon lemon juice
3 tablespoons 7-Up
6 cups of peeled and sliced tart apples (best
if stolen from neighbour's tree)
Secret 7-Up pastry (above, shhh)
2 tablespoons butter
1 tablespoon milkDIRECTIONS:
In a large bowl combine flour, salt, sugar, nutmeg, cinnamon, lemon juice and 7-Up. Toss in apples and coat with mixture. Put apples into secret 7-Up pastry. Dot apples with butter. Place top pastry over filling. Trim edge. Pinch edge to seal. Cut a few
1-inch slits to allow steam to escape. Brush top with milk; Suzanne likes to sprinkle some sugar on top, too. Cover edges of crust with foil and bake at 425° Fahrenheit for 25 minutes. Remove foil and bake another 15 minutes or until lightly browned. Cool for a bit. Yield: 1 pie for your favourite cyclist!
